Black Bean Quesadillas

I have a confession…a few months ago black beans were on my extensive “don’t eat” list.  I know, I can’t believe it either!  I guess that’s what I get for being such a picky eater and just assuming I wouldn’t like them.  Ha, I couldn’t have been more wrong because lately I am absolutely loving black beans!  And as an added bonus, they’re super good for you.  Just a few benefits of those little beans include:

-High fiber content.  1 serving (just 1/2 cup) contains 28% of the recommended dietary fiber.  They don’t call ‘em the “magical fruit” for nothing.

-There’s only 100 calories per serving.  So for a low amount of calories you get a food that’s super filling due to all that fiber.

-They’re cheap!  Even if you’re lazy like me and buy them by the can, it’s only $0.59/can and even cheaper if you buy them by the bag.

Lately I’ve made an effort to add black beans to at least one meal each day and last night it was a black bean and chicken quesadilla.  Gooey, melty cheese, black beans, and chicken all combined in a whole wheat tortilla?  Yes, please!.  And even better, it’s super easy to make.

Quesadilla Ingredients

Start with 2 tortillas, either whole wheat, or brown rice if you want it to be gluten free (we like the Trader Joe’s brand), and rub a small amount of butter to the outside of each tortilla.  You might be tempted to skip this step, but don’t!  Without the butter the quesadilla won’t get nice and crisp on the outside.

Next top it with the cheese of your choice (shred your own, it’s so much better!), some black beans, and a few small pieces of grilled chicken (ours had been marinated in a sweet chili sauce).

Pop it on the quesadilla maker (or into a frying pan) and let the cheese get nice and melty.

And after a few minutes get ready to dig into your fiber-rich, cheesy, ready-in-no-time-flat weeknight meal.

New Things I’m Loving Lately

I don’t know how the weather is where you are but here in south TX, it’s hot, hot, hot!  So rather than torture myself by trying to run, walking it is.  Obviously I don’t burn as many calories or get as good of a cardiovascular workout  but I also don’t feel like death while I’m doing it so I consider that a win. :)

I found these at the Lululemon store on sale for like $36 and snatched them up.  Even online they’re on-sale for $49, down from $68.  I now understand why people profess their love for all things Lulu, though I will say that if you’re not interested in spending the big bucks on those shorts, I recommend these!

This is the best dog toy ever.  The ball is made out of a soft material, pliable enough that the dogs can chew it while still being durable.  We’ve had it a month and it looks no different today than it did the day it arrived.  It has a slight minty smell and a small hole at the top big enough to fit a few treats.  And the most important part…the dogs love it.  I can’t recommend this thing enough (and as a bonus it’s actually made in the USA)! For large dogs, medium dogs, and small dogs.

These were delicious.  They also happen to be the only homemade enchiladas I’ve ever made, but still, they were awesome.  We made them exactly as the recipe dictates (except we used corn instead of flour tortillas to make it gluten-free), but next time I’m going to try switching out a little sour cream for Greek yogurt and adding some black beans.

It’s Been 3 Months…

Wow, can’t believe it’s been 3 months since I last posted.  Thankfully things have drastically improved since August’s diagnosis.  There were some hard weeks months, but we definitely see the light at the end of the tunnel.  Now for a little run-down of a few things that have been happening around here lately.

1.  August had a 5 day EEG last month and seems to have found a medication that has nearly stopped his twitches.  He went from having 20-50 per day to only 1-2!


2.  I turned 29!

3. Duncan is getting big.  Like seriously big.  How did we start with this little puppy…

5. I’m officially obsessed with Stitch Fix.

For someone who detests shopping you can’t beat a personal shopper who sends you 4 new clothing items and 1 accessory every month for only $20 (for any items you keep that $20 gets put towards the cost of the item so you’re only out the $20 if you keep nothing).  So far I’ve received 4 packages and kept at least 1-2 items each time.  Interested in checking it out, click here.

6. We went camping.  I hated it.

7.  Eloise developed an infection on her back.  First we tried to make her wear a t-shirt so she couldn’t scratch.

When that didn’t work, we took her into the vet and turns out she had a hot spot, which actually looked like this under all that fur…

My Sister’s Birthday and Texas Barbecue

Yesterday was my little sister’s 17th birthday!  Hard to believe that in just a year she’ll be graduating high school and getting ready to head off to college.

And yes, my “little” sister is way taller than me, and has been for about 6 years.


So yesterday August and I decided to do something a little out of the ordinary and drove up to Austin to eat at The Salt Lick.  You might have heard of it as the contestants on Top Chef cooked there and it’s been featured on lots of food shows as having the best barbecue in Texas.  It’s a rather unsuspecting place when you first pull up.

But as soon as we walked around the back we saw a line out the door.  Considering it was 3 pm, that awkward time between lunch and dinner, I took that as a sign that it was be really good.  Thankfully we only ended up waiting about 30 minutes.

The restaurant was about what you’d expect at a barbecue establishment in that the whole place was full of big wooden tables and benches.  Oddly enough, our party of 2 got a whole one to ourselves. :)

We opted for the “all-you-can-eat” barbecue plate which included brisket, sausage, and ribs, along with baked beans and potato salad as the sides.

These people do not mess around when it comes to cooking their barbecue.



I’ll be the first to admit that I’ve never been the biggest barbecue fan but this stuff was good and the barbecue sauce was amazing (maybe even as good as my beloved Montgomery Inn sauce).  We ate 2 plates worth and they even gave us a 3rd to take home.  It’s not every weekend that we drive an hour and a half simply to hit up a restaurant but we had a great time.  And if you’re ever in Austin don’t miss out on the best barbecue in Texas. :)
