My boyfriend, August, had an inkling he had Celiac Disease in August 2011. After years of stomach problems it finally clicked one night after a few wheat beers made him way more sick than a few beers should. He was then diagnosed in April 2012. Some days living gluten-free is a real struggle, but we’ve found a way to make it work.

I am also a gluten free eater…celiac disease forced that hand… anyway I was wondering if you have tried the Cup for Cup flour from Thomas Kellers ad hoc company?
I use it in “regular’ recipes in place of that “evil grain” flour.
I would be interested to know what you think of it… I even made home made pasta with it…awesome!!
We haven’t tried a whole lot of replacement flours to be honest, mostly because I don’t know which ones are good and the one time we did try using one to make a pizza dough it turned out terrible!
But any gluten-free flour that makes tasty homemade pasta must be pretty good. I’ll be on the lookout for some to try!
