A Quarter Century

I am one of 5 children.  I am the oldest and have 3 younger brothers and 1 younger sister ranging in age between 25 and 16.  Today my little brother turns 25.  We shared an apartment for a year and a half while we lived in Hershey, PA (before I moved to TX) and while it wasn’t always easy sharing an apartment with my younger bro, I would have never survived that year and a half without him.  So today I want to wish him a very happy 25th birthday!!

Workout

As soon as I got home from work I was greeted by this…

Even if a burglar came into the yard she'd probably roll over and expect them to rub her belly...so much for a guard dog!

And even though the thermometer in the backyard said it was almost 90 I decided to head out on a short run with Eloise anyway.

At least we had a nice shady trail to run our 3 miles on.

Dinner

One of the foods that goes right out the window when you’re forced to eat gluten free is anything battered and fried.  We assumed fried chicken was a thing of the past.  So when I stumbled upon a recipe by fANNEtastic Food for corn flake encrusted chicken fingers I knew that was as close as we’d ever come to fried chicken!  I followed her recipe exactly.

I dipped the chicken fingers into a mixture of 2 eggs and dijon mustard followed by crushed corn flakes with salt, pepper, garlic powder, and paprika and baked them at 400 for 15 minutes.

I paired the chicken fingers with oven roasted broccoli.

I cut up one head of broccoli, tossed it in some olive oil and sprinkled on some salt, pepper, and garlic powder and cooked it in the oven at 400 for 20 minutes.

This was a super easy meal, yet delicious.  And the best part was that August also approved as evidenced by the fact that he went back for seconds and asked if he could take the leftovers to work tomorrow.  Success!
