I mean, does this really look Olympic quality to you?

I will openly admit to absolutely loving the Olympics (mostly summer but I’ll watch winter, too).  I would take all 2 weeks off work and watch it 24/7 if I thought I could get away with it, that’s how much I love it.  Growing up my 2 main sports were gymnastics and diving.  I was a gymnast for 8 years and a diver for 10.  You’ll be hard pressed to find a young gymnast (or diver) whose doesn’t dream of the Olympics.

Seeing all the articles pop up about the upcoming Olympics has me excited and I can’t wait for them to start!  My all time, hands down favorite Olympic moment…

Sadly after 8 years of gymnastics the only thing I can still do is a handstand.

But at least mine was better than August’s or Eloise’s :)

 

Dinner

To cook up dinner for tonight we used the good old crockpot.  Man, do I ever love crock pot cooking.  Tonight we made Buffalo Ranch Chicken with sweet potato fries (from Carrots N’ Cake) and roasted broccoli.

All you do is throw a few pounds of chicken breasts (can be frozen or thawed), buffalo sauce of your choice, and ranch mix into the crockpot in the morning before leaving for work.  We cooked ours on low for ~10 hours.  When we got home all we had to do was bake the cut up sweet potatoes and broccoli.

Made for a perfect Thursday evening meal. :)
